Beef with a difference!


Dexter cattle first appeared in 1845, with suggestions that the breed was development due to the use of Devon and Kerry cattle genetics. Lord Hawarden of Dundrum House, Co. Tipperary has his estate agent, Mr Dexter, develop a strain based on the local mountain cattle.

Later, Dexter cattle became known as ‘The Poor Man’s Cow’ because a small landowner was able to get an adequate supply of milk and meat for his family, even on the rough grazing areas of Ireland.

The Dexter breed disappeared in Ireland during the 1940’s due to changes in farming prices and the import of larger beef breeds. Today, there are approximately 2000 Dexter cattle in Ireland.

However since the 1970’s, the Dexter breed has made a comeback and have since made their way back to the grassland and climate what they were specifically bred for and are back on our Irish Menus.

Killenure Dexter Gourmet Beef is an artisan found company, based on the grounds of Killenure Castle, in Co. Tipperary, established by Eavaun Carmody, who has combined her main two interests. She is passionate about the Dexter cattle breed and sparks an interest in producing quality beef, which lead to the establishment of ‘Killenure Dexter Gourmet’.

Killenure Dexter Gourmet take pride in every aspect of their Dexter beef production from rearing, butchering and maturing their meat.

The beef produced by the Dexter is a traditional type, lean with light marbling of fat.

It has been described as having a rich, nutty taste, sweeter than other breeds.

In comparison to other animals, Dexter have a smaller carbon print compared to other cattle breeds, living a life stress free on grass, producing the healthiest meat possible which is rich in omega 3’s and Conjugated linoleic acid (CLA’s), antioxidants and low saturated fat.
